These are absolutely delicious. I made them for the family a few nights ago, and they were a hit. Next time, I’m going to mix the sauce into the meatloaf itself and “frost” them muffins with whipped potatoes when they’re done!

Although I haven’t specifically tested it with this recipe, ground turkey should work fine, as well. Just note that different preparations of ground turkey can have more (or less) fat, which may affect the final consistency and also the nutritional profile, as compared to making this recipe with lean ground beef. Be sure to read the labels as, surprisingly, ground turkey often has even more fat than very lean ground beef does. ~Shelley

I’ve never tried that, Gary, so I’m not 100% sure how this recipe would perform. But, I did some research for you and found other Meatloaf Muffins recipes that use paper liners, and I noticed comments that said the liners stuck or didn’t work well. I hope that helps – and if you decide to give it a try with this specific mini meatloaf recipe, I’d love to know how it goes! ~Shelley

Can one use the regular paper for cupcakes to put the meatballs in to cook them or will they stick to the paper
