The cool thing about how the sauce is made up of only 2 ingredients – the ketchup and mustard – is that it somehow doesn’t taste like that’s all that’s in there! You don’t get a big wallop of either ketchup flavor or mustard flavor. It all just tastes sloppy-delicious together! So excited for you to make these! ~Shelley

They really are a cinch to make, Analida! If you want to be specifically sneaky, I’d suggest chopping the veggies up much more finely. You could also consider cooking the veggies (rather than stirring them in at the end) so they meld more into the sauce. The true spirit of this sloppy joe recipe is to have those big, chunky, fresh bites of cheeseburger-topping-veggies. But, if you’re looking to be stealthy for the kiddos, it could be worth compromising the great texture and fresh flavors. If you try it, I’d love to hear how it goes – let me know! ~Shelley

I hear ya! I’m all about working in extra veggies (plus extra flavors and textures) wherever I can! Plus, to be sure these are as healthy as possible, don’t miss our tips on choosing VERY lean meat and healthier ketchup and pickles. Be sure to serve these sloppy joes on whole grain buns, too. And, to round out the meal with more nutrition, go for sweet potato fries instead of regular, or serve this alongside a garden salad. ~Shelley
