It’s a clever idea, isn’t it? I’d seen some recipes for Irish Nachos before, and I thought that was such a fun twist, but they all basically stopped at swapping the potatoes in place of tortilla chips … and from there they were still just “regular” nachos. Seemed to me that, if they REALLY wanted to be truly Irish Nachos, they ought to go one step further and ditch the Mexican toppings, too.
