Never bought prime rib before? It’s handy to know that, according to Food Network, at the market or grocery store, you’ll likely see prime rib called “standing rib roast.”

And, don’t be confused by the “prime” in the term “prime rib”: it doesn’t mean that the meat is necessarily USDA prime grade steak. While it certainly is possible to purchase more expensive, “prime grade” prime rib, that’s not automatically the case just because “prime” is in the name.

Roasting is Vegetable Magic

If you hang around my website a lot, you know I like to call roasting “magic” for creating delicious vegetables that even kiddos love.

I’ve sworn by this magic for years.

And on plenty of occasions, I’ve overheard my mom-friends discussing how shockingly much their own kids adore roasted vegetables, too … how even their picky eaters fight over that last spear of oven roasted broccoli.

No doubt. This magic is real. 

It’s all because of the caramelization that happens as those nice little toasty brown spots develop in your oven. That process equals big, delicious flavor. It transforms your vegetables into something altogether more complex and delicious than where the raw veggies began.

I Can Help You Make FANTASTIC Roasted Vegetables!

Oven roasting is pretty much my #1 most favorite way to make veggies.

I probably roast up some sort of vegetable at least once or twice each week. No kidding!

And, over the years, I’ve tried so many different ways of prepping, seasoning, and serving them.

I’ve learned a lot along the way. So, for sure … I’ve got oodles of tips, tricks, and suggestions to share with you!

From perfecting very simple recipes that basically require 1 main ingredient (you know … a vegetable!). To whipping up creative re-imaginings of everything from nachos to pizza fries. And even to making main dishes that beautifully showcase all the deep, satisfying flavors roasted vegetables have to offer.

Roasted Vegetables: FAQs & Tips

What Temperature Is Best for Roasting Vegetables?

Roasting temperatures for vegetables can vary from about 350°F to 500°F, depending on the exact recipe and the type of veggies you’re roasting. It also can depend on the results you’re shooting for. Do you want soft, slow-roasted vegetables? If so, then you’ll want to roast at the cooler end of the temperature range. But (if you’re like me), you want veggies that still have a bit of texture, along with plenty of roasty-toasty, flavorful caramelized spots. In that case, you’ll want to roast in the higher heat range, above 400°F. My go-to temperature is usually 475°F.

What Are the Steps to Roast Vegetables?

To roast vegetables, the general steps are:
1) Cut the vegetables into similar sizes and shapes, so they roast uniformly, and make sure they’re patted dry, if needed (so they roast instead of steam).
2) Toss the veggies with a little oil and your seasonings (typically at least salt and pepper, but this can include all sorts of other dried herbs and spices, too).
3) Spread the vegetables out in a single layer on a baking sheet, so they’re not piled on top of each other.
4) Flip the vegetables once during the roasting process.
5) Serve with any sauces, drizzles or fresh herbs you desire.

Do You Flip Vegetables When Roasting?

You will almost always want to stir or flip vegetables once during the roasting process, about halfway through. This increases the number of surfaces that will develop those deliciously golden brown, caramelized spots. One exception: I don’t bother to flip asparagus.

Can I Use a Cookie Sheet to Roast Vegetables?

Large cookie sheets or sheet pans are ideal for roasting vegetables. For the best results, you want to choose large pans (again, like cookie sheets) so the vegetables can be spread apart. If the vegetables are crowded together or piled on top of each other, they’ll tend to steam more than really roast, and they won’t be able to develop the caramelized bits that make roasted veggies so delicious.

Do You Roast Vegetables in the Oven Covered or Uncovered? Should I Cover Vegetables When Roasting?

Always roast vegetables uncovered. If you cover them, moisture will be trapped inside and the vegetables will end up being mushier and they won’t properly caramelize and brown.

Do You Season Vegetables Before Roasting?

Yes, it’s best to season roasted vegetables with at least salt and pepper before roasting. Additionally, you can also toss them with other dried spices and seasonings, before they go in the oven. After roasting, you can always add a pinch more seasoning if it’s needed. And, any fresh herbs should be added after roasting (not before).

Is It Better to Roast Vegetables on Parchment Paper?

There are pluses and minuses to roasting vegetables on parchment paper. The biggest benefit of using parchment is the easy cleanup. Some people feel you get even better caramelization if you roast directly on the baking sheet itself (especially one that’s been pre-heated, along with the oven). But, I find that I can strike a perfect balance by roasting at a high heat (usually 475°F) for good caramelization while doing so on parchment (so cleanup’s a breeze).

How Do You Roast Vegetables So They Don’t Get Soggy?

There are several keys to ensuring that oven roasted vegetables are tender but not soggy.
1) Be sure they’re not wet. Pat them dry if needed. This will help to prevent them from actually steaming, more than roasting.
2) Use a little oil, but not too much. You’re shooting for all the vegetables to have a thin slick of oil all over the outside. But it’s important to avoid drowning the veggies in excessive puddles of oil.
3) Be sure the vegetables are spread out on the pan, and not clustered together or piled on top of each other. Again, this is to prevent steaming and promote good browning. Use a second baking sheet if you need to.
4) Roast at a higher heat. (I generally suggest 475°F.) This will help the vegetables to develop caramelized spots more quickly, before the interiors are completely overcooked and mushy.

Why Do Roasted Vegetables Taste Better?

It’s all about the caramelization, which happens during roasting as the sugar in the vegetables (yep … vegetables DO have sugars) are heated to a point where their colors and flavors are changed (deliciously). As Bon Appétit so perfectly explains, “When sugars caramelize, they develop nuttiness, bitterness, toastiness, and even a little bit of buttery creaminess.” Yeah … YUM!

Whenever I’m taking a dish to a party, I always try to figure out how to make it a real headliner. One of those recipes with automatic wow-factor.

So people just have to try it. And then sidle over, asking if they can nab the recipe.

It doesn’t have to be hard to create something unique. Especially at the holidays … when fun shapes and colors offer up tons of festive inspiration.

Take this Mediterranean dip, for instance.

I’ve been making a non-Christmas-tree-shaped version of it (aka my “Layered Pesto Appetizer Dip“) for nearly 20 years, all year ’round. (Of course, I tweaked and upgraded it a bit along the way.) It’s always so popular at parties!

And suddenly … it seemed so obvious

The pretty green pesto with red and gold toppings? It was like Christmas on a plate! Or … ahem … a Christmas TREE on plate (if I shaped it right).

Seriously really easy to do!

And with layer-upon-layer of great flavors, it’s a crowd-pleaser all around!

Why Everyone Will Love Your Christmas Tree Dip

So what have we got goin’ on here, in all these alluring, tree-trimmed layers of dipping joy?

Well, there’s …

  • A backdrop of cream cheese and cannellini beans, blended together into a smooth spread that’s somewhere between a white bean dip and the typical, holiday cream cheese dip.
  • Then comes savory, herby pesto. (And all its Christmasy-y greeness!)
  • And then a flourish of decorative roasted red peppers, artichoke hearts, and Kalamatas.
  • Sprinkle on some feta “snow” and maybe hang a few {darling!} Sweety Drop peppers as ornaments.

In no time flat, you’re heading to the next Christmas party with a platter full of decked-out holiday “WOW”!

Who knew trimming a tree could be so easy … or so YUMMY?!?

Let me walk you through the easy steps and give you a few handy tips along the way …

How to Make This Easy Christmas Appetizer

Step #1

Grab your food processor (I like to use the smallest, “mini” one from my Ninja set), and whir together a can of cannellini beans and an 8-ounce block of reduced-fat cream cheese with a little salt.

Ingredient Tip: Cream Cheese

Lower-fat Neufchâtel cheese (marketed in America as reduced-fat cream cheese) tastes so much like full-fat cream cheese that nobody will ever, ever notice the difference. I totally pink swear. But, you’ll save on calories, saturated fat and cholesterol compared to using “regular” full-fat cream cheese.

Process this until it’s really smooth, scraping down the sides as needed. You don’t want any bits of bean skins to ruin the velvety texture. Just like when you’re making hummus, keep going until it’s smooooooth.

You’ll end up with about 1 3/4 cup of the cream cheese mixture.

Step #2

Spread that yummy, creamy base layer on a large platter or serving tray, working it into the shape of a Christmas tree.

I recommend using a fairly large platter, if possible, so that this base layer isn’t too thick. (But not to worry, as I’ll explain in Step #3 below, you can adapt if your platter isn’t as large as mine, and your cream cheese base layer has to be a little thicker.)

The platter I’m using in my photos is a 12″ x 16″ oval.

Step #3

Next, spread your pretty green pesto on top of the cream cheese layer.

Ingredient Tip: Great Pesto

There are definitely some major flavor and color differences amongst store-bought pesto brands. Some are a sad green-brown color, with lackluster flavor to match. The best ones seem to come from the refrigerated section, rather than from shelf-stable jars in the pasta aisle.

My all-time favorite store-bought brand is the Kirkland brand at Costco. It’s a lovely, vibrant green with yummy, bold flavor. Another decent one is the Rana brand I find at my local grocery store.

Of course, you can also make your own homemade pesto, if you have the time and have a fresh basil plant happily growing on your kitchen windowsill this time of year. Cooking Light published a helpful article on how to make sure your homemade pesto turns out a wonderful, bright green color (which is exactly what you want when creating a Christmas tree!).

Nudge the pesto near to the edges of the cream cheese layer, but not quite all the way up to the edges.

It’s not a big deal, but if you do happen to push the pesto clear to the edge, it may drip messily down over the side a bit.

Pro Tip: Adapting for Platter Size

If you don’t have a relatively large platter (again, mine is a 12″ x 16″ oval), you have two choices.

(1) You can choose not to use all of the cream cheese mixture, so that you still get a thin layer of cream cheese base (that doesn’t overwhelm all the other flavors). You want there to be a good balance.

• Or (2) if your cream cheese layer ends up on the thicker side, you can simply use a little bit more pesto to strike a tasty balance … probably nearer to 1/3 cup of pesto.

But otherwise, for a Christmas tree that’s about the size of the one in my photos, 1/4 cup of pesto should be enough.

Step #4

Now here’s where it gets really creative and fun!

Decorating time! (Falalalala …)

• I use a star-shaped cutter to cut the star from a large, flat side of a yellow bell pepper.

• And for the tree trunk? It’s super easy to use some of those brownish mini peppers you often see at the grocery store these days (like I show you below). But, if you can’t find those, you could also use a rectangular, brown cracker as the trunk, too.

• For the tree’s garland, I mix chopped artichoke hearts and roasted red peppers. Festoon them in swoopy, garland-y arcs that zigzag merrily back and forth across your Christmas tree.

Then, hang your ornaments!

• Horizontally sliced Kalamata olives are an ideal ornament shape. (Hint: for the best flavor, definitely use Kalamatas here, not the canned black olives you find in the Mexican or pizza aisles.)

• And for the cute little red ornaments hanging off the tip of each bough? I use Sweety Drop Peppers, which are perfectly shaped like tiny Christmas ornaments!

Ingredient Tip: Sweety Drop Peppers

You might also see these labeled as Pepper Drops, Incan Red Drops or Petits Poivrons. Look for them in jars in the Italian aisle or near other jarred peppers, in the refrigerated specialty section near other Italian antipasto ingredients like olives, or on the olive bar at your grocery store.

• For the final flourish … let it snow, let it snow, let it snow! A sprinkling of feta completes your holiday creation!

Making Your Christmas Tree Dip Ahead

This dip tastes best when the cream cheese mixture is softer and not stone-cold, straight from the fridge.

So, you’ve got a couple options if (like me!) you’re into making things ahead to save on last-minute stress.

Option 1: You can chop your toppings, cut out your star and tree trunk … do all the prep work on the “decorations” … in advance. Store it all in the fridge for up to a couple of days. Then, simply whir up your cream cheese layer and assemble your tree in a few easy minutes, right before serving.

Option 2: You can also make the entire appetizer dip ahead of time, cover it in plastic wrap and refrigerate it for up to about a day in advance. Bring it out of the fridge a little while (maybe 20 minutes) before serving, though, to give the cream cheese layer time to soften a bit (which also makes it taste better, for some reason).

The important thing here is not to let it sit out too long, of course (for food safety).

If you’re driving to a Christmas party across town, let’s say, well then your pre-made dip should be nicely ready to go when you get there. Perfectly softened and dip-able!

How to Serve Your Festive Masterpiece

When it comes to the best dippers for digging into this party appetizer, I recommend:

  • crunchy pita chips or crackers (whole grain if possible, to boost nutrition)
  • mini sweet peppers or sliced bell peppers (red and green peppers add to the festive color scheme)

FAQs At-a-Glance

Can I Use “Regular” Full-Fat Cream Cheese in This Christmas Dip?

You can, but it’s higher in calories, fat (and saturated fat), and cholesterol. Lower-fat Neufchâtel cheese tastes just as great in this recipe, and is a nutritionally better option here.

I Don’t Have a Star-Shaped Cutter to Make the Star. Any Suggestions?

You can {carefully!} use a paring knife to cut a star out of the yellow pepper if you don’t have a cookie cutter. I’d recommend printing out a little template – or at least Googling a photo of a star – to guide you, if possible. At holiday time, you can also sometimes find festive, star-shaped crackers or pretzels, which would also work in a pinch.

What About the “Tree Trunk”? I Can’t Find a Brown-ish Pepper.

That’s easy to solve! Simply place a rectangular cracker at the base of the tree instead.

Can I Use a Different Type of Bean (Instead of Cannellinis)?

I recommend sticking with cannellini beans in this recipe. They’re a bit creamier and more tender than chickpeas, yielding a smooth base for the dip. And, of course, kidney beans or black beans aren’t the right color to use here.

This year, “trimming the tree” has a whole new meaning, doesn’t it?!?

This Christmas Tree Dip is a yummy, super-cute party headliner! Our tips make it so easy to whip up for a Christmas Party, in just minutes!

Ingredients

Base:

  • 1 (14.5-ounce) can cannellini beans (preferably organic or reduced-sodium), drained and rinsed
  • 1 (8-ounce) block reduced-fat cream cheese (Neufchâtel cheese)
  • 1/4 teaspoon kosher salt

Toppings:

  • 1/4 - 1/3 cup fresh or refrigerated pesto (see note)
  • for the star: yellow bell pepper (or a star-shaped cracker)
  • for the tree trunk: a rectangular slice of a brownish or purple-black pepper (or a brown, rectangular cracker)
  • 1/2 cup chopped artichoke hearts (canned, not marinated)
  • 1/2 cup chopped (jarred) roasted red peppers
  • Kalamata olives, sliced horizontally into rings
  • Sweety Drop peppers (tiny, tear-shaped peppers)
  • 1-2 tablespoons crumbled, reduced-fat feta cheese or tomato-basil-flavored feta

Instructions

  1. In a blender or food processor (I used the “mini” one from my Ninja set in my photos), combine the beans, cream cheese and salt until very smooth, scraping the sides as needed.
  2. Spread the cream cheese mixture onto a large platter (mine is a 12" x 16" oval), in the shape of a Christmas tree.
  3. Then spread a thin layer of pesto over top, not quite to the edge of the cream cheese mixture. If your cream cheese layer is rather thick (for example, if you're using a smaller-sized platter), you may want to use closer to 1/3 cup pesto, but otherwise, 1/4 cup should be enough.
  4. For the star, use a cookie cutter to cut a star-shape from the flat side of the yellow pepper. Cut a rectangle from your brownish pepper for the tree's trunk. (Or, alternately, use crackers for these.) Place the star at the top and the tree trunk at the bottom (as shown in photos in our post above).
  5. Decorate your tree with artichokes, roasted red peppers, Kalamatas, and Sweety Drop peppers (refer to photos in our post for ideas). I like to combine the artichokes and red peppers into strings of garland, and place the Kalamatas and Sweety Drops as ornaments. Lastly, sprinkle your tree with feta cheese "snow."

Notes

Pesto: A good, vibrantly flavorful (and colorful) pesto is important in this recipe. To save time, we often grab store-bought pesto. Be sure to select one that is fresh-looking and really green. I find that refrigerated brands are generally much better than jarred, shelf-stable brands. A couple I regularly use are Rana (from my local grocery store), and also the Kirkland brand at Costco (which is my favorite of the two).

Make-ahead tips: This Christmas Tree Dip tastes best when the cream cheese mixture is softer and is not really cold, straight out of the refrigerator. To work on this recipe ahead, you have two options: (1) Do all of the chopping and prep of the decorative toppings a day or two ahead, and stash them in the fridge. Then, quickly whir up your cream cheese layer and assemble your tree in a few easy minutes, right before serving. (2) To make your Christmas Tree Dip completely ahead of time, wrap it in plastic up to a day in advance, but bring it out of the refrigerator 20 minutes or so before serving, to give the cream cheese layer time to soften back up a bit. (But remember, for food safety, not to bring it out too far ahead.)

Why You’ll Love This Mint Chocolate Fudge with All Your Heart

Sure, sure … we’ve already covered the deeply-darkly-chocolate-y part. Of course you’re gonna love that.

But it really does get even better! Like …

You don’t need a lot of time, or a lot of ingredients to make this.

You also don’t need fancy equipment. No candy thermometers and no double boilers. It’s a microwave fudge.

Because EASY luxury is better than stressful, complex, time-consuming luxury, that’s for darn sure.

And you know what else you don’t need? All that butter and sweetened condensed milk and gobs of extra sugar most other fudge recipes call for.

Nope nope and nope!

This too-good-to-be-true chocolate heaven is actually even a leeeeetle bit better for you. (Didn’t see that plot twist comin’ did ya?)

Plus, I’ve got a handy tweak that adapts this Mint Chocolate Fudge recipe to be a “freezer fudge.” Stash it away for weeks and weeks in the freezer, so you can pull out a nibble of chocolate joy any time you need it. Aaaaaaahhhh … at a moment’s notice. Any day. (‘Cause you deserve it!)

How to Make This Minty Christmas Fudge (Anytime!)

First, let’s talk ingredients.

There aren’t many of them, but I do have a couple tips for you.

Ingredient Tip #1: PEPPERMINT Extract

We’re using PEPPERMINT extract here. Not spearmint. You also don’t want ones that are just labeled “mint” (those are generally spearmint-y, too).

This fudge has an Andes or Thin Mint vibe, and for that you want to use PEPPERMINT extract.

If you’d like a slightly more minty fudge, go with 2 teaspoons of the peppermint extract. Or, scale back to 1 1/2 teaspoons for a more chocolate-forward flavor. Both are great, depending on how minty you’re feelin’.

Ingredient Tip #2: Choosing Coconut Oil

Coconut oil is solid at room temperature, but quickly and easily melts into the fudge mixture.

At the store, you’ll typically find it sold in jars, as either “refined” or “unrefined.” Virgin or unrefined coconut oil tends to have a more pronounced tropical, coconut-y flavor than refined coconut oil. But, you’re using such a small amount in this recipe that it’s pretty unnoticeable, either way. Use whichever you have on hand.

Step #1

Grab a microwave-safe bowl, and stir together 1/2 cup + 2 teaspoons of nonfat evaporated milk, and your peppermint extract.

(Yes, I know that 1/2 cup + 2 teaspoons of milk sounds like a really weird measurement. But, I’ve tested this recipe at least 6 times, slightly tweaking the amount of evaporated milk … and that amount was the winner, for sure. Those extra 2 teaspoons bring the fudge to the perfect texture I’m shooting for in a fudge recipe.)

Pro Tip: Evaporated Milk

Evaporated milk is made from regular milk, with a large amount of the liquid evaporated out. It’s NOT the same as sweetened, condensed milk. (I go into a lot more detail about evaporated milk in my post for Decadent 3-Ingredient Fudge.)

Before you open your can of evaporated milk, be sure to follow the directions on the can that say to SHAKE WELL. Evaporated milk often separates, with a thick layer forming at the bottom of the can. Since we’re using it to create thickness and creamy body in this fudge, you WANT that silky layer – don’t leave it behind! If shaking the can around before you open it doesn’t get all those solids incorporated back in, then briskly whisk them into the milk before using it.

Add 1 teaspoon of coconut oil and the semi-sweet chocolate chips to your bowl.

(Heads-up: As I’ll explain more later, if you’re planning to do the optional drizzle, I’d suggest getting those ingredients ready in a small bowl now, too.)

Step #2

Microwave the fudge mixture for about 1 1/2 minutes (1 minute 20 seconds if you have a powerful microwave).

Step #3

When you take your bowl of warmed ingredients out of the microwave, immediately begin stirring it, until it’s completely smooth.

Now, don’t panic here (because you probably will)!

At first, it’ll seem like this isn’t quite going to work … like it’s not quite going to get smooth. I feel that way every single time I make this fudge recipe.

But don’t worry … just keep on stirring.

And whatever you do … DON’T microwave your fudge mixture again (which could scorch it). Just use the residual heat to continue melting all the chocolate chips until they’re velvety smooth.

Equipment Tip: Skipping the Double Boiler

Just like with our 3-Ingredient Chocolate Dip and that 3-Ingredient Fudge I mentioned before, the reason we can get away with skipping the double-boiler and using this easy technique to make microwave fudge is because we gently heat the milk and the chocolate together, rather than introducing the milk into the mixture after we’ve heated the chocolate.

As a result, instead of causing the chocolate to seize, the warm milk helps to gently melt the chocolate as it smoothly incorporates into the fudgy mixture.

Step #4

Ok. Did you stir and stir (and NOT panic)? Then you should have a luscious, smooth bowl of thick chocolate lava.

Resist the urge to grab a spoon and start eating straightaway. (Ok ok … maybe a little spoonful. I can’t blame you!) Instead of eating it all in this enticing lava stage, though, what you really need to do is pour your warm fudge mixture into an 8×8″ pan.

Pro Tip: Lining the Pan

For easy removal and cleanup, I like to line my pan with aluminum foil that I’ve lightly sprayed with nonstick cooking spray.

I’ve tried a number of different strategies and materials, and the sprayed foil consistently performs the best.

This is totally optional, but makes it super easy to remove the whole slab of Mint Chocolate Fudge from the pan, all at once. (You’ll simply peel away the foil later, after your fudge has completely set.)

Use a rubber scraper to spread the fudge mixture evenly in your pan. Sometimes I also find it’s helpful to tap or gently shake the pan to level the mixture out.

Step #5

Now for that optional (but oh-so-recommended) festive drizzle!

You want to do this step fairly quickly (before your chocolate base starts to harden and set in the pan). In fact, I highly recommend that you have the ingredients for the drizzle all measured out in a little bowl, ready for “go time.”

All you need is a teaspoon of evaporated milk, about 3-4 drops of peppermint extract, and 2 tablespoons of white chocolate chips.

You can also add a drop of green food coloring, if you’d like. I’ve made this fudge both with and without the green. It’s pretty with a white swirl, too. But somehow the green really says “I’m minty!”

At any rate, you microwave that little bowl very briefly – for only about 15 seconds.

Then, just like with the chocolate fudge base, you stir and stir until it’s smooth.

Next, spoon the swirl mixture into the corner of a sandwich-sized zipper bag and snip off a small piece of the corner.

Drizzle it onto the chocolate fudge in lines running all the same direction.

Then run a toothpick (shallowly) through the drizzle lines, in the opposite direction (like I show in the photos above).

Step #6

Refrigerate your fudge until it’s solid, and then cut it into squares.

Nibble, mmmmmmmm … repeat. Maybe share a little with someone you really, really like. (Or hoard it all for yourself – your choice!)

Why This Fudge Recipe Works

You might be surprised that you can get such decadent fudge without the butter … and the heaps of sugar … and the sugar-y sweetened condensed milk that most other fudge recipes use.

But, one bite and you’ll be convinced!

By making our Mint Chocolate Fudge recipe without condensed milk (subbing evaporated milk instead) … all we’ve basically done is slash sugar and calories. It’s the same strategy we’ve used for years in making our 3-Ingredient Fudge (which inspired this minty Christmas Fudge recipe).

Since both kinds of milk are evaporated down to a thicker, richer consistency, we still get the same decadent creaminess and silky, fudgy texture from the evaporated milk as we would from the condensed milk.

And, since we’re shooting for a luscious, deeply, darkly chocolate-y fudge experience here, we definitely don’t want our fudge to be sickeningly, over-the-top sweet. No need for either that sweetened condensed milk, or for loads of additional sugar!

How to Make Freezer Fudge

This fudge can absolutely be made ahead, wrapped tightly, and stashed in the freezer for several weeks. It’s a terrific make-ahead Christmas fudge to add to cookie platters or share as teacher and hostess gifts for the holidays. Let it come to room temp before sharing, and everyone will LOVE it!

BUT …

When I say “Freezer Fudge,” that’s not really what I’m talking about. For true Freezer Fudge, you shouldn’t have to let it come to room temperature before enjoying a perfect, fudge-y texture!

To create Freezer Fudge (that you can enjoy at a moment’s notice, whenever a chocolate emergency strikes), I sometimes tweak the base recipe just slightly, so my fudge actually comes out of the freezer at a softer, absolutely ideal texture, without having to thaw first.

I’m talking immediate chocolate therapy you can pull out and savor … right when you NEED it! Straight from the freezer, no thawing required. Yes, please!

If that’s more your style, all you have to do is tweak the ingredients in the base layer:

  • increase the evaporated milk to 2/3 cup
  • increase the coconut oil to 1 1/2 teaspoons

This yields a softer texture, straight from the freezer.

You’re armed and ready for any chocolate emergency the day might throw at ya! Pull a little square of chocolate joy from the freezer and ….. aaaaaahhhhhhhhh … much better!

Can You Make This Fudge Ahead?

Sure! It refrigerates great for a week or more, and freezes well, too! Just let it come to room temperature, and enjoy. This is a great Christmas fudge recipe to help you get a jumpstart on holiday sweets and cookie trays. And, it’s a wonderful DIY gift you can make ahead in big batches to share with neighbors, teachers, coaches, and party hosts.

Can I Make This Fudge with Sweetened Condensed Milk Instead of Evaporated?

No. Although they sit next to each other on grocery store shelves, they’re not interchangeable.

Can I Make a Half Batch?

Sure! When I was testing the precise measurements for this recipe, I made quite a few half batches. Simply cut all recipe ingredients in half, and use an 8″ loaf pan instead of an 8×8 square pan.

How Do You Store Fudge?

I recommend storing fudge in either the fridge or freezer, so it lasts as long as possible and stays nice and fresh. Fudge can dry out, though, so I also recommend wrapping it tightly in a layer or two of wax paper or plastic, and then slipping it inside an air-tight zipper bag.

Mint Chocolate Fudge (aka Christmas Fudge)

A super-easy Mint Chocolate Fudge! So deeply chocolate-y, with an alluring kiss of mint. Decadent! It's a perfect Christmas Fudge (with a handy "freezer fudge" hack so you can stock up for chocolate emergencies all year long)!

  Ready in 30 Minutes or Less    Freezable  •  Make Ahead    Vegetarian    Gluten Free  

Ingredients

Fudge:

  • 1/2 cup + 2 teaspoons evaporated fat free milk (NOT sweetened condensed milk)
  • 1 1/2 - 2 teaspoons pure peppermint extract (not mint or spearmint) (see note)
  • 1 teaspoon coconut oil
  • 3 cups semi-sweet chocolate chips

Swirl (optional):

  • 1 teaspoon evaporated fat free milk
  • 3-4 drops pure peppermint extract
  • 1 drop green food coloring (optional)
  • 2 tablespoons white chocolate chips (we use Nestlé)

Instructions

  1. In a microwave-safe bowl, combine 1/2 cup + 2 teaspoons milk and 1 1/2 - 2 teaspoons peppermint extract. Then add 1 teaspoon coconut oil and semi-sweet chocolate chips.
  2. Microwave on high for approximately 1 minute 20 seconds to 1 minute 30 seconds (the exact timing can vary slightly depending on the power and wattage of your microwave).
  3. Stir until completely smooth and well-incorporated. (Do not microwave again; use the residual heat to continue melting all chips completely. Refer to photos in post above, if needed.)
  4. Pour the mixture into an ungreased 8x8" pan (or to make the entire block easier to remove, you can line the pan with foil that's been lightly coated with cooking spray). Smooth the top and tap or gently shake the pan to level the mixture.
  5. For the optional swirl (if using, measure and mix this at the same time you measure and mix the semi-sweet fudge layer, so it's ready to microwave as soon as you're done with the base layer, before the base layer begins to set up and thicken): Combine 1 teaspoon milk, 3-4 drops peppermint extract, and food coloring (if using) in a small bowl. Add white chocolate chips and microwave for about 15 seconds, then stir until smooth. Quickly spoon the mixture into the corner of a sandwich-sized zipper bag and snip off a small piece of the corner. Drizzle onto the chocolate fudge base layer in one direction, and then run a toothpick shallowly through, in the opposite direction (refer to photos in post).
  6. Refrigerate fudge until solid before cutting.

Notes

Peppermint Extract: I've tested this fudge recipe extensively with both 1 1/2 teaspoons and 2 teaspoons of extract mixed into the semi-sweet chocolate. Both are delicious, and how much you use depends on whether you'd like a more chocolate-forward fudge with more subtle mint, or if you'd like the mint to be more prominent (but still not overwhelming).

Storage: I recommend storing this fudge, tightly sealed or wrapped, in the refrigerator, which will keep it fresh for several days. It's decadent right out of the fridge, but will soften to a more melt-in-your-mouth, fudgy texture if you allow it to come back to room temperature before serving.

Freezing: This fudge also freezes beautifully. You can wrap an entire block of uncut fudge, or cut it into pieces and wrap each square individually in wax paper or plastic wrap, then store it in a freezer bag. For best texture, allow it to soften and come to room temperature before serving (each piece should come to a fudgy room temperature consistency within about 30 minutes).

Freezer Fudge Recipe Modification: I love to keep a stockpile of this fudge in the freezer (for chocolate emergencies!) ... and be able to grab individual pieces to eat, straight out of the freezer, with no need to let it come to room temperature (as I need to do with the "regular" version of this recipe). To make this "freezer fudge," simply increase the amount of evaporated milk in the semi-sweet chocolate layer to 2/3 cup and increase the coconut oil to 1 1/2 teaspoons. Refrigerate until set, and then, if you'd like, cut it into individual pieces before tightly wrapping and freezing. The fudge should be perfectly soft, straight from the freezer, but will be a little too soft if left to sit at room temperature.

I’ve seen some recipes that require cooking the cranberries, but there’s no cooking to be done here.

  • Kicky jalapeño (you can scale the heat up or down here … more on that in a sec …)

How This Salsa Recipe Is Healthier

That golden, tropical pineapple not only adds sunshine-y, tropical vibes … it also helps to make this salsa better for you.

A lot of Cranberry Salsa recipes call for 3/4 cup to even a whopping full cup of refined, white sugar.

Instead, we use a bit of honey, which boasts some nice micronutrients, plus 1/4 cup of juicy, sweet pineapple. In addition to a wallop of vitamin C, pineapple has oodles of other vitamins, minerals, and anti-inflammatory properties.

It all adds up to a much more nuanced, layered sweetness than you’d get with plain white sugar … and it’s a whole lot better for you, too!

Oh, and let’s not forget all that great nutrition riding along with the cranberries, onions, peppers, and cilantro. Produce for the win … especially when it tastes this fantastic!

Alrighty. Ready to blitz up a batch for yourself? You’ll only need a few minutes and a handful of ingredients …

How to Make Your Cranberry Salsa

Step #1

Put your cranberries in a mini food processor (I like to use the smallest one in my Ninja set).

Pulse them just 2 or 3 times.

You don’t want them to be completely pulverized yet. It’s ok if there are still some big chunks.

Scrape down the sides of the processor and add your juicy pineapple.

Pulse it again, maybe just 2-4 times more, scraping down the sides in between pulses if you need to.

The exact consistency is up to you, but you’re basically looking for small, fairly uniform bits of both the cranberries and the pineapple.

Step #2

Scoop your cranberry-pineapple mixture into a bowl, and stir in all the other ingredients.

And just like that … you’re done!

How easy was that???

Your Cranberry Salsa is delicious right away, so feel free to start dipping. Grab some crunchy, multi-grain tortilla chips, and get on in there!

Making Your Salsa Ahead

If you want to make your salsa ahead, it’s also terrific (refrigerated) for up to about 3 days.

As it sits, it’ll release a little juice, so you may want to give your Cranberry Salsa a stir before serving it up.

After a day or two in the fridge, you’ll notice that the cranberry juice will turn the whole mixture a more uniformly vibrant crimson. Still gorgeous, but with not quite as many varied colors as you see in my photos, right after my salsa was freshly made.

If your refrigerated, day-old salsa needs a color refresh, you can sprinkle a bit of minced cilantro on top for some extra (Christmas-y) green.

The flavors will also meld a bit as this salsa sits, but it’s honestly great either right after its made, or after being refrigerated for awhile. Your choice.

Oh – but I promised to tell you how to scale up the heat if you wanted it spicier, didn’t I?? Ok – let’s talk about that!

How to Make Your Salsa Hotter (or Keep It Mild)

Most of the heat in jalapeños (and other chile peppers) is in the internal ribs and seeds, especially as you get closer to the stem end.

To keep this Cranberry Jalapeño Salsa nice and mild, simply remove all of the seeds and white ribs from your jalapeño before mincing.

Pro Tip: Jalapeño Handling

An easy way to remove those seeds and ribs is to slice the jalapeño in half vertically, and then use a spoon to scrape them out.

For safety, though, it’s best to wear rubber gloves when you do this, to protect your skin. And definitely be sure not to touch your eyes and face before you’ve washed your hands well after handling chiles. {OUCH!}

If you’d like to add some heat to your salsa, reserve some seeds and minced internal ribs, and add a little bit of them at a time, until your salsa is as kicky as you’d like.

I’ve been surprised how just a tiny bit of the seeds and ribs jumpstarts a good pop of heat. So, I definitely recommend going slowly and adding just a smidge at a time. Stir it all through your salsa really well, and taste to see if it’s spicy enough, before adding a bit more, if needed.

Can I Double This Recipe?

Absolutely! I often make a double- or even triple-batch. As written, my recipe makes about 1 cup, which is ideal for an evening snack or a small gathering. But, you can easily scale up the recipe to make more. Depending on the size of your processor, though, you may find it’s best not to process a large amount of cranberries and pineapple all at once, but to pulse them in batches.

How Many Cups of Cranberries Are in a 12-Ounce Bag?

You should get about 3 1/2 cups per bag.

Can I Make This Recipe Using Frozen Cranberries?

You can (after you thaw them first). The cranberry texture will be a little softer, but it definitely works in a pinch. However, because thawed cranberries tend to compact into the measuring cup more than firm, fresh berries, I recommend that you go with a scant 1 cup for this recipe if you’re using thawed (and you’ll probably only get a total of about 2 3/4 cups of thawed berries per bag).

Can I Adjust the Heat?

Yep! To add more heat, leave in some of the ribs and seeds from the jalapeño. (Read more details about this in the post above.) Kicky!

Ingredients

  • 1 cup cranberries
  • 1/4 cup diced fresh pineapple
  • 1/4 cup finely chopped cilantro
  • 2 1/2 tablespoons finely chopped red onion
  • 2 tablespoons honey
  • 1 tablespoon minced jalapeño (see note about adjusting spiciness)
  • 2 teaspoons fresh lime juice
  • 1/16 teaspoon kosher salt

Instructions

  1. In a mini food processor, pulse cranberries 2-3 times. Scrape sides and add pineapple, pulsing 2-4 times more until desired consistency is reached.
  2. Scoop cranberry mixture into a bowl and add all other ingredients, stirring to combine.
  3. Serve immediately or refrigerate, covered, for up to 3 days.

Notes

Jalapeño spiciness (adjusting heat): The exact heat varies a little from one jalapeño to the next, but if you remove all the interior ribs and seeds they're not very spicy at all. For a mild salsa, completely remove all seeds and ribs from your pepper. If you'd like a little more heat, I recommend adding just a few seeds and a tiny bit of the minced ribs at a time. Taste and add more until your desired heat level is reached. (Go slowly, as a little can add quite a bit of heat.)

Adjusting yield: This recipe, as written, makes a modest 1 cup of salsa, which is great for a small gathering. It's easy to scale the recipe up, and I often double or even triple the recipe for larger groups or to keep some on hand in the fridge. Depending on the size of your food processor, it may work best to pulse large amounts of cranberries and pineapple in batches. (Note that a typical 12-ounce bag of cranberries equals about 3 1/2 cups of berries.)
