Why You’ll Love This Mint Chocolate Fudge with All Your Heart

Sure, sure … we’ve already covered the deeply-darkly-chocolate-y part. Of course you’re gonna love that.

But it really does get even better! Like …

You don’t need a lot of time, or a lot of ingredients to make this.

You also don’t need fancy equipment. No candy thermometers and no double boilers. It’s a microwave fudge.

Because EASY luxury is better than stressful, complex, time-consuming luxury, that’s for darn sure.

And you know what else you don’t need? All that butter and sweetened condensed milk and gobs of extra sugar most other fudge recipes call for.

Nope nope and nope!

This too-good-to-be-true chocolate heaven is actually even a leeeeetle bit better for you. (Didn’t see that plot twist comin’ did ya?)

Plus, I’ve got a handy tweak that adapts this Mint Chocolate Fudge recipe to be a “freezer fudge.” Stash it away for weeks and weeks in the freezer, so you can pull out a nibble of chocolate joy any time you need it. Aaaaaaahhhh … at a moment’s notice. Any day. (‘Cause you deserve it!)

How to Make This Minty Christmas Fudge (Anytime!)

First, let’s talk ingredients.

There aren’t many of them, but I do have a couple tips for you.

Ingredient Tip #1: PEPPERMINT Extract

We’re using PEPPERMINT extract here. Not spearmint. You also don’t want ones that are just labeled “mint” (those are generally spearmint-y, too).

This fudge has an Andes or Thin Mint vibe, and for that you want to use PEPPERMINT extract.

If you’d like a slightly more minty fudge, go with 2 teaspoons of the peppermint extract. Or, scale back to 1 1/2 teaspoons for a more chocolate-forward flavor. Both are great, depending on how minty you’re feelin’.

Ingredient Tip #2: Choosing Coconut Oil

Coconut oil is solid at room temperature, but quickly and easily melts into the fudge mixture.

At the store, you’ll typically find it sold in jars, as either “refined” or “unrefined.” Virgin or unrefined coconut oil tends to have a more pronounced tropical, coconut-y flavor than refined coconut oil. But, you’re using such a small amount in this recipe that it’s pretty unnoticeable, either way. Use whichever you have on hand.

Step #1

Grab a microwave-safe bowl, and stir together 1/2 cup + 2 teaspoons of nonfat evaporated milk, and your peppermint extract.

(Yes, I know that 1/2 cup + 2 teaspoons of milk sounds like a really weird measurement. But, I’ve tested this recipe at least 6 times, slightly tweaking the amount of evaporated milk … and that amount was the winner, for sure. Those extra 2 teaspoons bring the fudge to the perfect texture I’m shooting for in a fudge recipe.)

Pro Tip: Evaporated Milk

Evaporated milk is made from regular milk, with a large amount of the liquid evaporated out. It’s NOT the same as sweetened, condensed milk. (I go into a lot more detail about evaporated milk in my post for Decadent 3-Ingredient Fudge.)

Before you open your can of evaporated milk, be sure to follow the directions on the can that say to SHAKE WELL. Evaporated milk often separates, with a thick layer forming at the bottom of the can. Since we’re using it to create thickness and creamy body in this fudge, you WANT that silky layer – don’t leave it behind! If shaking the can around before you open it doesn’t get all those solids incorporated back in, then briskly whisk them into the milk before using it.

Add 1 teaspoon of coconut oil and the semi-sweet chocolate chips to your bowl.

(Heads-up: As I’ll explain more later, if you’re planning to do the optional drizzle, I’d suggest getting those ingredients ready in a small bowl now, too.)

Step #2

Microwave the fudge mixture for about 1 1/2 minutes (1 minute 20 seconds if you have a powerful microwave).

Step #3

When you take your bowl of warmed ingredients out of the microwave, immediately begin stirring it, until it’s completely smooth.

Now, don’t panic here (because you probably will)!

At first, it’ll seem like this isn’t quite going to work … like it’s not quite going to get smooth. I feel that way every single time I make this fudge recipe.

But don’t worry … just keep on stirring.

And whatever you do … DON’T microwave your fudge mixture again (which could scorch it). Just use the residual heat to continue melting all the chocolate chips until they’re velvety smooth.

Equipment Tip: Skipping the Double Boiler

Just like with our 3-Ingredient Chocolate Dip and that 3-Ingredient Fudge I mentioned before, the reason we can get away with skipping the double-boiler and using this easy technique to make microwave fudge is because we gently heat the milk and the chocolate together, rather than introducing the milk into the mixture after we’ve heated the chocolate.

As a result, instead of causing the chocolate to seize, the warm milk helps to gently melt the chocolate as it smoothly incorporates into the fudgy mixture.

Step #4

Ok. Did you stir and stir (and NOT panic)? Then you should have a luscious, smooth bowl of thick chocolate lava.

Resist the urge to grab a spoon and start eating straightaway. (Ok ok … maybe a little spoonful. I can’t blame you!) Instead of eating it all in this enticing lava stage, though, what you really need to do is pour your warm fudge mixture into an 8×8″ pan.

Pro Tip: Lining the Pan

For easy removal and cleanup, I like to line my pan with aluminum foil that I’ve lightly sprayed with nonstick cooking spray.

I’ve tried a number of different strategies and materials, and the sprayed foil consistently performs the best.

This is totally optional, but makes it super easy to remove the whole slab of Mint Chocolate Fudge from the pan, all at once. (You’ll simply peel away the foil later, after your fudge has completely set.)

Use a rubber scraper to spread the fudge mixture evenly in your pan. Sometimes I also find it’s helpful to tap or gently shake the pan to level the mixture out.

Step #5

Now for that optional (but oh-so-recommended) festive drizzle!

You want to do this step fairly quickly (before your chocolate base starts to harden and set in the pan). In fact, I highly recommend that you have the ingredients for the drizzle all measured out in a little bowl, ready for “go time.”

All you need is a teaspoon of evaporated milk, about 3-4 drops of peppermint extract, and 2 tablespoons of white chocolate chips.

You can also add a drop of green food coloring, if you’d like. I’ve made this fudge both with and without the green. It’s pretty with a white swirl, too. But somehow the green really says “I’m minty!”

At any rate, you microwave that little bowl very briefly – for only about 15 seconds.

Then, just like with the chocolate fudge base, you stir and stir until it’s smooth.

Next, spoon the swirl mixture into the corner of a sandwich-sized zipper bag and snip off a small piece of the corner.

Drizzle it onto the chocolate fudge in lines running all the same direction.

Then run a toothpick (shallowly) through the drizzle lines, in the opposite direction (like I show in the photos above).

Step #6

Refrigerate your fudge until it’s solid, and then cut it into squares.

Nibble, mmmmmmmm … repeat. Maybe share a little with someone you really, really like. (Or hoard it all for yourself – your choice!)

Why This Fudge Recipe Works

You might be surprised that you can get such decadent fudge without the butter … and the heaps of sugar … and the sugar-y sweetened condensed milk that most other fudge recipes use.

But, one bite and you’ll be convinced!

By making our Mint Chocolate Fudge recipe without condensed milk (subbing evaporated milk instead) … all we’ve basically done is slash sugar and calories. It’s the same strategy we’ve used for years in making our 3-Ingredient Fudge (which inspired this minty Christmas Fudge recipe).

Since both kinds of milk are evaporated down to a thicker, richer consistency, we still get the same decadent creaminess and silky, fudgy texture from the evaporated milk as we would from the condensed milk.

And, since we’re shooting for a luscious, deeply, darkly chocolate-y fudge experience here, we definitely don’t want our fudge to be sickeningly, over-the-top sweet. No need for either that sweetened condensed milk, or for loads of additional sugar!

How to Make Freezer Fudge

This fudge can absolutely be made ahead, wrapped tightly, and stashed in the freezer for several weeks. It’s a terrific make-ahead Christmas fudge to add to cookie platters or share as teacher and hostess gifts for the holidays. Let it come to room temp before sharing, and everyone will LOVE it!

BUT …

When I say “Freezer Fudge,” that’s not really what I’m talking about. For true Freezer Fudge, you shouldn’t have to let it come to room temperature before enjoying a perfect, fudge-y texture!

To create Freezer Fudge (that you can enjoy at a moment’s notice, whenever a chocolate emergency strikes), I sometimes tweak the base recipe just slightly, so my fudge actually comes out of the freezer at a softer, absolutely ideal texture, without having to thaw first.

I’m talking immediate chocolate therapy you can pull out and savor … right when you NEED it! Straight from the freezer, no thawing required. Yes, please!

If that’s more your style, all you have to do is tweak the ingredients in the base layer:

  • increase the evaporated milk to 2/3 cup
  • increase the coconut oil to 1 1/2 teaspoons

This yields a softer texture, straight from the freezer.

You’re armed and ready for any chocolate emergency the day might throw at ya! Pull a little square of chocolate joy from the freezer and ….. aaaaaahhhhhhhhh … much better!

FAQs At-a-Glance

Can You Make This Fudge Ahead?

Sure! It refrigerates great for a week or more, and freezes well, too! Just let it come to room temperature, and enjoy. This is a great Christmas fudge recipe to help you get a jumpstart on holiday sweets and cookie trays. And, it’s a wonderful DIY gift you can make ahead in big batches to share with neighbors, teachers, coaches, and party hosts.

Can I Make This Fudge with Sweetened Condensed Milk Instead of Evaporated?

No. Although they sit next to each other on grocery store shelves, they’re not interchangeable.

Can I Make a Half Batch?

Sure! When I was testing the precise measurements for this recipe, I made quite a few half batches. Simply cut all recipe ingredients in half, and use an 8″ loaf pan instead of an 8×8 square pan.

How Do You Store Fudge?

I recommend storing fudge in either the fridge or freezer, so it lasts as long as possible and stays nice and fresh. Fudge can dry out, though, so I also recommend wrapping it tightly in a layer or two of wax paper or plastic, and then slipping it inside an air-tight zipper bag.

Try this recipe as a Christmas fudge for the holidays this year. So easy, so pretty, and my-oh-my sooooooo indulgent!

Mint Chocolate Fudge (aka Christmas Fudge)

A super-easy Mint Chocolate Fudge! So deeply chocolate-y, with an alluring kiss of mint. Decadent! It's a perfect Christmas Fudge (with a handy "freezer fudge" hack so you can stock up for chocolate emergencies all year long)!

Ingredients

Fudge:

  • 1/2 cup + 2 teaspoons evaporated fat free milk (NOT sweetened condensed milk)
  • 1 1/2 - 2 teaspoons pure peppermint extract (not mint or spearmint) (see note)
  • 1 teaspoon coconut oil
  • 3 cups semi-sweet chocolate chips

Swirl (optional):

  • 1 teaspoon evaporated fat free milk
  • 3-4 drops pure peppermint extract
  • 1 drop green food coloring (optional)
  • 2 tablespoons white chocolate chips (we use Nestlé)

Instructions

  1. In a microwave-safe bowl, combine 1/2 cup + 2 teaspoons milk and 1 1/2 - 2 teaspoons peppermint extract. Then add 1 teaspoon coconut oil and semi-sweet chocolate chips.
  2. Microwave on high for approximately 1 minute 20 seconds to 1 minute 30 seconds (the exact timing can vary slightly depending on the power and wattage of your microwave).
  3. Stir until completely smooth and well-incorporated. (Do not microwave again; use the residual heat to continue melting all chips completely. Refer to photos in post above, if needed.)
  4. Pour the mixture into an ungreased 8x8" pan (or to make the entire block easier to remove, you can line the pan with foil that's been lightly coated with cooking spray). Smooth the top and tap or gently shake the pan to level the mixture.
  5. For the optional swirl (if using, measure and mix this at the same time you measure and mix the semi-sweet fudge layer, so it's ready to microwave as soon as you're done with the base layer, before the base layer begins to set up and thicken): Combine 1 teaspoon milk, 3-4 drops peppermint extract, and food coloring (if using) in a small bowl. Add white chocolate chips and microwave for about 15 seconds, then stir until smooth. Quickly spoon the mixture into the corner of a sandwich-sized zipper bag and snip off a small piece of the corner. Drizzle onto the chocolate fudge base layer in one direction, and then run a toothpick shallowly through, in the opposite direction (refer to photos in post).
  6. Refrigerate fudge until solid before cutting.

Notes

Peppermint Extract: I've tested this fudge recipe extensively with both 1 1/2 teaspoons and 2 teaspoons of extract mixed into the semi-sweet chocolate. Both are delicious, and how much you use depends on whether you'd like a more chocolate-forward fudge with more subtle mint, or if you'd like the mint to be more prominent (but still not overwhelming).

Storage: I recommend storing this fudge, tightly sealed or wrapped, in the refrigerator, which will keep it fresh for several days. It's decadent right out of the fridge, but will soften to a more melt-in-your-mouth, fudgy texture if you allow it to come back to room temperature before serving.

Freezing: This fudge also freezes beautifully. You can wrap an entire block of uncut fudge, or cut it into pieces and wrap each square individually in wax paper or plastic wrap, then store it in a freezer bag. For best texture, allow it to soften and come to room temperature before serving (each piece should come to a fudgy room temperature consistency within about 30 minutes).

Freezer Fudge Recipe Modification: I love to keep a stockpile of this fudge in the freezer (for chocolate emergencies!) ... and be able to grab individual pieces to eat, straight out of the freezer, with no need to let it come to room temperature (as I need to do with the "regular" version of this recipe). To make this "freezer fudge," simply increase the amount of evaporated milk in the semi-sweet chocolate layer to 2/3 cup and increase the coconut oil to 1 1/2 teaspoons. Refrigerate until set, and then, if you'd like, cut it into individual pieces before tightly wrapping and freezing. The fudge should be perfectly soft, straight from the freezer, but will be a little too soft if left to sit at room temperature.

~ Galentine’s Day is possibly the best holiday anyone has invented in a long, long time. So just what IS Galentine’s Day? We’ve got the scoop, plus loads of Galentine’s Day ideas for how to celebrate, what to eat, Galentine’s gifts (totally optional BTW) … and more! ~

What Is Galentine’s Day?

Galentine’s Day celebrates gals and their besties – those friendships that have stood the test of time, through thick and thin, through boyfriends and husbands, through the good days and the bad. It’s not about romance – it’s about friendship.

Pretty hard to think of many better reasons to celebrate!

As Cosmpolitan so perfectly puts it, “At its gooey heart … it’s a day dedicated to showing the most important people in your life how much you care about them. It’s corny. It’s cheesy. And that’s what makes it great.”

So great, right?!?

A totally made-up holiday (we’ll get to the hilariously, wonderfully, completely fictional roots of it all in a sec …) that is 100% about how much you treasure the most important friendships in your life. You don’t gotta do the gift thing, or even grab a sappy card. (Although … yeah, it’s ok if you want to.)

You just … celebrate the people you care about. So beautifully simple, so perfectly fun.

When Is Galentine’s Day?

Galentine’s Day falls on February 13. Right before Valentine’s Day (that other holiday for celebrating people we love best).

Parks and Rec Galentine’s Day (How It All Began)

As if this completely made-up holiday wasn’t fun enough (just because it’s such a great idea) … the whole story of how Galetnine’s Day started makes it even more fun!

Galentine’s Day is the wonderful invention of a completely fictional TV character – Leslie Knope on Parks and Rec (played by Amy Poehler). 

According to Wikipedia, the segment “Galentine’s Day” aired back in 2010 – the 16th episode of the second season of Parks and Recreation.

The basic outline is that Leslie Knope throws a brunch bash for her female friends, complete with plenty of waffles and other brunchy delicacies … and even ridiculous hand-made gifts like crocheted flower pens, mosaic portraits made from the crushed bottles of each friend’s favorite soda, and 5,000-word essays pontificating about why her friends are so awesome.

Ridiculous good fun – as only Parks and Rec can deliver it. 

And Leslie’s brilliant idea caught on like wildfire.

Because it wasn’t just ridiculous and fun. It was brilliant and perfect and just totally felt right. (Why did it take all these years until a fictional character finally figured out that our besties deserve their own celebration!?!? Seems so obvious now!)

But you’re not Leslie. And you probably don’t like to crochet flower pens. Probably don’t want to spend the time to write a bunch of 5,000 word essays.

No worries!

We’ve got lots of ideas for how to celebrate Galentine’s Day in style … your way!

Galentine’s Day Ideas

When it comes to celebrating this particular holiday in style, the great thing is that style doesn’t have to mean glitz and glamour and expense. Remember … it all started with waffles and crochet.

The best way to celebrate is YOUR way. The way that will make you and your friends feel the happiest, the most connected. 

So, what exactly could that be?

How about …

Galentine’s Day Brunch

If you wanna stay true to the roots of the day, brunch is the way to go.

And waffles – lots of waffles (maybe some mimosas, too)! 

You know we have lots of yummy brunch ideas for ya.

Bonus: because these recipe ideas are all a bit healthier, too, you and your besties won’t feel guilty celebrating again tomorrow. Because (don’t forget!) Galentine’s Day is immediately followed by that other day known for chocolates and caloric decadence. 😉

 

Galentine’s Day Evening

Can’t get everyone together for a morning brunch? No problem! I think Leslie would understand.

How about a casual evening, just catching up and laughing together? No guys, no kids. Just friend time. Sounds perfect, huh?

• Or, maybe cue up your favorite rom-com. Or, hey hey – why not pay homage to the reason you’re all there together, and giggle through a Parks and Rec watch-a-thon (remember the “Galentine’s Day” segment is in season 2).

Need a few snackies? (Of course you do! Can’t sip a nice glass of wine without some perfect munchies alongside.)

Galentine’s Day Gift Ideas

I’d say this is one of those holidays where you can totally skip the gifts. In fact, obsessing too much over the right gift just takes the focus off the whole point, anyway.

But, if you’re the gifty type, a well-chosen trinket or two isn’t out of bounds here, either.

Totally up to you – gifts or no gifts. There kinda aren’t a lot of rules for this holiday – whatever feels right for you and you pals is just fine. 

Sadly, just like so many other holidays, Galentine’s Day is already becoming more commercialized. (As if crochet and personally crafted essays weren’t good enough!) There are plenty of lists out there to fuel your ideas, if you feel like you have to buy something for your besties.

But, what about some ideas that are a little more heartfelt and true to where this holiday began? How about:

• A handmade scrapbook filled with pictures, ticket stubs … all the things from all the years. (The old-fashioned kind of scrapbook, no Shutterfly required.)

• A personal letter. (No no … you don’t have to hit Leslie’s 5,000-word-limit!) Just a thoughtful note about all the things that are most wonderful about your friend, all the things you adore about them, and how very much they mean to you.

• If you live somewhere warm enough that flowers are blooming right now (I’m jealous of you!), make each friend a custom bouquet filled with blooms in her favorite colors.

• Or, if you have a special talent or hobby – maybe making jewelry or cards or candles or soaps – leverage your skills to craft a personalized gift from the heart.

And hey, what if your special talent is cooking? Wanna whip up a little Galentine’s Day DIY gift in food form? Well then, you’ve come to the right place (you know … because food is what we do here)!

 

Galentine’s Day When You Can’t Be Together

Whether it’s because this is 2021 and a lot of us still can’t be together. Or, because some of your most special friends are too far away for brunching. No matter! Be creative! How about:

• A phone call. A really good, long call where you don’t simultaneously do laundry or empty the dishwasher. Where you 100% listen and truly, truly connect.

• Host that rom-com party or Parks and Rec watch-a-thon virtually. We’ve all gotten pretty good at the whole virtual thing now – this one’s easy!

• Plan ahead a little and mail out cards, or “Why You’re Awesome” essays, or your homemade candles … anything that reminds your friends how very much you value them.

You might think I’m kidding here, but I promise: I’m definitely not!

This stuff is amazing and magical and just flat-out decadent. I was absolutely astonished how well this recipe works. And how much I loved it (as in … completely addicting, hold-me-back, can’t get enough LOVED it).

Why You’re Gonna Love This Easy Fudge So Much

•  It’s just plain awesome. Rich and creamy with really deep chocolate flavor that’s not too sickeningly, over-the-top sweet.

•  It’s sooooo easy to make. I mean: 3 ingredients and 5 minutes is about as simple as simple gets. You don’t need sweetened condensed milk or even butter.

•  You also don’t need fancy equipment. No candy thermometers and no double boilers. It’s a microwave chocolate fudge. Yep, you read that right: microwave! Again … simple, simple, simple!

This Fudge Recipe Is Actually Healthier, Too!

Whaaaaa???

It’s true!

So many “traditional” chocolate fudge recipes call for calorie-packed sweetened condensed milk or butter – or both. And on top of all that, most also have loads of added sugar dumped in.

But, it turns out, you don’t actually need all that extra sugar and fat to make fantastic fudge. Nope! This recipe is insanely fantastic, and so much less naughty!

It’s a decadent treat you won’t feel guilty enjoying … or sharing with the ones you love.

All the yumminess, with none of the guilt!

Let me walk you through the process and give you a few handy tips along the way …

How Do You Make This Fudge Recipe Without Condensed Milk?

Step #1

Put your chocolate chips, evaporated (NOT condensed!) milk, and coconut oil in a medium-sized, microwave-safe bowl, and microwave them for about 1½ minutes.

Ingredient Tip: Virgin or unrefined coconut oil tends to have a more pronounced tropical, coconut-y flavor than refined coconut oil. You’re using such a small amount in this recipe, however, that it’s pretty unnoticeable, either way. Use whichever you have on hand.

Pro Tip: Before you open your can of evaporated milk, be sure to follow the directions on the can that say to SHAKE WELL. Evaporated milk often separates, with a thick layer forming at the bottom of the can. Since we’re using it to create thickness and creamy body in this fudge, you WANT that silky layer – don’t leave it behind! If shaking the can around before you open it doesn’t get all those solids incorporated back in, then briskly whisk them into the milk before using it.

Step #2

Immediately stir the warm fudge mixture until it’s completely smooth.

At first, it will seem like it’s not quite going to work … like it’s not quite going to get smooth. I feel that way every single time I make this fudge recipe!

But don’t worry … just keep on stirring.

And whatever you do … DON’T microwave your fudge mixture again (which could scorch it). Just use the residual heat to continue melting all the chocolate chips until they’re velvety smooth.

Pro Tip: Just like with our 3-Ingredient Chocolate Dip, the reason we can get away with skipping the double-boiler and using this easy technique to make microwave fudge is because we gently heat the milk and the chocolate together, rather than introducing the milk into the mixture after we’ve heated the chocolate. As a result, instead of causing the chocolate to seize, the warm milk helps to gently melt the chocolate as it smoothly incorporates into the fudgy mixture.

Step #3

If you’re using optional mix-ins like coconut or nuts (see below for yummy ideas and flavor combos!), stir them in after the microwave fudge mixture is totally smooth.

Then, pour your warm fudge mixture into a pan.

I generally use an 8×8″ pan if I’m planning to simply cut my fudge into squares. But an 11×7″ pan works, too, and it’s a good choice if you want to cut your fudge into fun shapes once it’s cooled (read on for more tips about that …)

Use a rubber scraper to spread the fudge mixture evenly in your pan. Sometimes I also find it’s helpful to tap or gently shake the pan to level the mixture out.

Step #4

Refrigerate your fudge until it’s solid, and then cut it into squares.

Or … for a really fun presentation for holidays or special gifts, you can use cookie cutters to cut out shapes!

This is easiest if the cookie cutters you use are taller than the fudge. (Which is why you might want to use an 11×7″ pan – to make your fudge a bit thinner and easier to cut into shapes.)

Is Evaporated Milk the Same as Condensed?

You might be wondering: isn’t evaporated milk the same as condensed milk? (I mean, they’re sitting right next to each other on the grocery store shelves, right?)

The short answer is no: they’re definitely not the same. Although they have some similarities, they’re actually quite different in taste and their uses in recipes.

Evaporated milk (like we use in this fudge recipe) and condensed milk are both made from regular ol’ cow’s milk, with about 60% of the water removed (evaporated) out of it.

Both products are shelf stable, which, as Wikipedia explains, makes evaporated milk and sweetened condensed milk terrific options for situations where refrigeration isn’t possible (think of historic warfronts, or of modern camping trips and disaster relief efforts).

But that’s where the similarities end.

Condensed milk (often called sweetened condensed milk) is basically evaporated milk with a lot of sugar added.

In fact, sweetened condensed milk has about 11 grams of sugar in every tablespoon (yeah – wow), and also a whole lot more calories – about 65 in every tablespoon.

By comparison, nonfat evaporated milk has no added sugar at all. It only has 1.5 grams of sugar (milk does have naturally occurring sugar) per tablespoon and just 12.5 calories. (Note that we use nonfat evaporated milk in this recipe, although you can also buy evaporated milk made with 2% or whole milk.)

Healthy Eating Tip: With its creamy thickness, evaporated milk is a great, lighter substitution for cream or half-and-half in many recipes where you want a velvety texture without piling on unwanted fat and calories. Our Instant Pot Sweet Potato Soup and Homemade Fudgesicles and Creamy Chicken Gnocchi Soup are other examples of this simple trick.

Why This Recipe Works

So, if you’ve been following along here, you probably see exactly why it works so well to make this chocolate fudge with evaporated milk.

By making our easy fudge recipe without condensed milk (subbing evaporated milk instead) … all we’ve basically done is slashed sugar and calories.

Since both kinds of milk are evaporated down to a thicker, richer consistency, we still get the same decadent creaminess, and silky, fudgy texture from the evaporated milk as we would from the condensed milk.

We don’t want our fudge to be sickeningly, over-the-top sweet. We want a balanced, rich, deep chocolate flavor. Evaporated milk is the perfect solution!

Hey … Wasn’t This Recipe Originally a Chocolate Coconut Fudge?

Yup! Good catch – it sure was!

We first posted this recipe way back in February 2015 as “4-Ingredient (No Butter!) Chocolate Fudge with Coconut.”

My dear friend Gretchen (who used to run this blog with me way back then) developed this easy fudge with a fourth ingredient – shredded coconut – stirred in.

It was an immediate, runaway HIT.

True story. Gretchen had given me some of her newly developed fudge recipe to taste-test. (Because you know we always exhaustively test, test and re-test our recipes so we know they’ll be PERFECT for you!)

My response??? After sampling the very first batch of this decadent stuff, I texted her, “Curse you, temptress creator of fudge! We can’t stop eating it!” And we couldn’t stop. It was so fantastic!

It even passed the ultimate fudge test: my dad (a certified picky eater and 100% fudge addict) loved it, too. He never even noticed that it was easier and healthier. He just wanted more.

But here’s the thing: through the years, I’ve realized that this actually isn’t just a Chocolate Coconut Fudge.

It’s really a whole lot more.

So, I changed the name and updated this post to reflect how super-versatile and full of flavor options this recipe really is!

Here’s what I mean …

Variations and Add-Ins to Switch Up Your Chocolate Fudge Recipe

In all the times I’ve made this fudge recipe, I’ve tried so many different fun flavor combinations! Here are just a few ideas to get you started:

• Chocolate Fudge – The plain jane: 3 ingredients. No add-ins. Decadent. ’Nuff said.

• Chocolate Coconut Fudge – And, of course, you can go for “the original” version of this recipe by stirring in about 1/3 cup shredded coconut.

• Nutty Fudge – Or go nuts. Literally. Chop up some walnuts (a personal fave of mine) … or any other nut you happen to have on hand.

• Almond Joy Fudge – Yesssssss. It’s as amazing as it sounds. Mix in some shredded coconut and also some coarsely chopped, sliced almonds.

• Cherry Pecan Fudge – I made this especially for my mom’s birthday one year. Coarsely chop some dried cherries and pecans. (She loved it BTW!)

Anddddd … the list could go on and on! Feel free to get creative!

Pro Tip: I generally shoot for about 1/2 cup total of whatever add-ins I’m using. But that’s just a starting point, and you can certainly experiment with even more (maybe more like 3/4 cup) if you enjoy a seriously loaded-up fudge.

Can You Freeze Fudge?

In general, most fudge freezes well.

This one definitely does.

I recommend cutting it and tightly wrapping each square individually in plastic wrap or wax paper, then packing them all into an airtight, zippered freezer bag.

Whenever you need a little chocolate fix, pull one out!

Ideally, you would plan ahead for your chocolate emergency and allow your little square of chocolate joy to thaw gently in the fridge.

But, let’s be real … who plans ahead for chocolate emergencies???

In a pinch, you can definitely eat this fudge straight from the freezer – it doesn’t freeze totally rock-hard-solid. Or, it should thaw to a fudgy, room temperature consistency on the counter in about half an hour (if you can wait that long).

Oh! And, since you can make it ahead and freeze it, this fudge is always ideal for easy (no-stress!) homemade gifts. Wonderful if you like to work ahead on DIY gifts for the holidays!

Ingredients

  • 3 cups semi-sweet chocolate chips
  • 2/3 cup fat free evaporated milk
  • 1 teaspoon coconut oil
  • optional mix-ins such as approx. 1/2 - 3/4 cup coconut flakes, nuts, or dried fruit (see flavor combination ideas in the post)

Instructions

  1. Place chocolate chips, evaporated milk, and coconut oil in a medium-sized, microwave-safe bowl.
  2. Microwave on high for approximately 1 1/2 minutes (the exact timing can vary slightly depending on the power and wattage of your microwave).
  3. Stir until completely smooth and well-incorporated. (Do not microwave again; just use the heat from the chocolate to continue to melt the other chips.)
  4. Once the chocolate mixture is smooth, stir in any optional mix-ins that you'd like.
  5. Pour mixture into an ungreased 8x8" pan (or an 11x7" pan for thinner fudge that's easier to cut into shapes with cookie cutters). Smooth the top and tap or gently shake pan to level the mixture.
  6. Refrigerate until solid.

Notes

Storage: We recommend storing this fudge, tightly sealed or wrapped, in the refrigerator, which will keep it fresh for several days. It's decadent right out of the fridge, but will soften to a more melt-in-your-mouth, fudgy texture if you allow it to come back to room temperature before serving.

Freezing: This fudge also freezes beautifully. We recommend cutting it and wrapping each square individually in wax paper or plastic wrap, then storing in a freezer bag. The fudge can be eaten straight from the freezer, or you can allow it to soften to your liking (each piece should come to a fudgy room temperature consistency within about 30 minutes).

The funny thing is, though, that this killer recipe actually started out as a mistake!

From Kitchen Fail … to Sinful Chocolate Dip Recipe

It’s true: this little gem was a happy accident (like our “accidental” Pineapple Orange Creamsicle Smoothies – LOVE those!).

It all started back when I was developing our family-favorite recipe for fudge. One of my very first attempts at creating that rich chocolate, oh-so-simple fudge recipe turned out to be … NOT fudge. Nope. The texture was waaaaaay too liquidy — not fudge-y at all.

But it was just so darn good!

So I took a little of it over to share with Shelley (because — ya know — deep, dark chocolate is good in any form and should always be shared with friends!). She swooned a little and exclaimed something along the lines of, “Ohhhhhhhh! Chocolate dip!”

She’s a smart one, that Shelley. That fudge-fail wasn’t a fail at all. It was actually a downright delicious Chocolate Dip!

With just a tad more tweaking, this sensational dip was all set to be shared with more friends (like all of you). And believe me, you’ll want to share it with your friends, too!

It’s really, really easy. (Really!)

And, it’s super versatile!

Chocolate Dip … OR … Molten Lava Fondue

At room temperature, this recipe maintains a perfect dipping consistency – terrific for picnics and appetizer buffets. 

But, it can also transform into a molten chocolate lava dip for a fun family fondue night. Or a romantic dinner (hey, look at you — already planning ahead for Valentine’s Day 😉 )! 

And if you just need a little pick-me-up treat? This quick Chocolate Dip is there for you then, too. Perfect no-guilt indulgence at the end of a long day. Go molten or not … whatever your weary soul needs for a little pampering.

Let me talk you through a couple key points, and you’ll be all ready to whip this up any time!

How to Melt Chocolate for Dipping

Alrighty, friends.

As you know, at Two Healthy Kitchens, we love doing things efficiently, but without making compromises. This recipe’s no different.

There are several ways to melt chocolate, either all by itself or along with other ingredients (like the evaporated milk we use in this Chocolate Dip recipe).

The “traditional” fancy-schmancy way to melt chocolate for dipping is to use a double boiler setup. This is where you fill a pot with water, and put a second pot (or bowl) on top, with chocolate inside. Then you slowly bring the water in the bottom pot to no more than a low simmer. The heat from the water rises up and melts the chocolate above it. This classic, double-boiler method helps to reduce the chance of overheating or scorching the chocolate.  

But there’s a much quicker way to melt this Chocolate Dip. And it won’t ruin the chocolate.

The microwave!

The microwave method works especially well for this Chocolate Dip recipe, where we’re not melting chocolate all by itself.

Here’s What You Do, Step-by-Step

Step #1: Just pop your bowl full of oh-so-yummy ingredients in the microwave for about a minute and a half on high. (The exact time can vary a little, depending on how powerful your microwave is.)

When you remove the warmed chocolate mixture from the microwave, it won’t look like dip yet. And it may not seem like the chocolate is melty enough for this to work … but have faith!

Step #2: Simply stir until the chocolate chips are thoroughly melted.

Step #3: Then add in the last 1/4 cup of chips, stirring some more as they melt into the thick, rich, chocolate-y swirl. It’ll take a couple of minutes until your Chocolate Dip is completely smooth, but the residual heat will continue to melt the chocolate and create a velvety delight.

It’s super important to resist the urge to put your dip back into the microwave to heat it vigorously again. If you over-heat it, you could end up scorching the chocolate. (Resist … resist …)

One additional key to this dip’s success is that we’re heating the ingredients together, rather than introducing the milk into the mixture after we’ve heated the chocolate. You don’t want to add cold liquids (in this case, evaporated milk) into already-melted chocolate. That mistake can cause your chocolate to seize up … which would be very sad, indeed.

In this Chocolate Dip recipe, we’re gently heating the milk and most of the chocolate together, which makes the milk easy to incorporate into the chocolate in a smooth and luxurious dip. No worries about it seizing up on you!

Make-Ahead Tips!

So, let’s say that the party isn’t until tomorrow, but you have time to cook now

Lucky for you, this dip can easily be made a day or two ahead! All you have to do is make it, cover it, and store it in the refrigerator.

Even when it’s cold, it doesn’t fully solidify … which means, you won’t have to re-melt the chocolate! 

But, it’ll be a bit too thick straight out of the refrigerator for easy dipping. So you’ll want to make sure to pull it out of the fridge a bit ahead of time, before you set it out at the picnic or buffet. It’ll return to a perfect dipping consistency after sitting out for just a little while.

If you’d like to serve it as a warm “molten” Chocolate Dip or a fondue, gently (gently!!) warm it back up in the microwave until it’s the desired temperature and consistency. Just be sure to check it and stir it very frequently, so it doesn’t scorch during reheating. 

Oh – and if you reallllly want to knock their socks off at the next party, serve this, along with another THK make-ahead favorite: Fruit Kabobs! Huge WOW factor … guaranteed!

What to Dip in Chocolate Fondue (Serving Ideas)

Okay, so you’ve got a delicious bowl of tempting chocolate sitting there staring at you — but what should you do with it?? It’s a dip … so should you, ya know … dip things? Or, geez … it looks and smells so delicious … should you eat it straight-up?

Short answer. Yes! There’s no wrong answer here!

Of course, everyone’s heard of chocolate-dipped strawberries. And there’s nothing wrong with sticking to a romantic classic, chocolate-strawberry combination (hint, hint again: Valentine’s Day!!!!) … but we like to get a lil’ creative and find new dippable favorites, too! 

This ultra-impressive, decadently chocolate, ooey-gooey yummilicious dip is perfect when paired with all kinds of goodies. Heck, it might even be good with broccoli. (Disclaimer: I have NOT tried it with broccoli.)

Try dipping:

• Any fresh fruit – in addition to the chocolate-dipped strawberries we already mentioned, Fruit Bouquets (or those make-ahead Kabobs) would be perfect. And for summer parties, our patriotic-themed Red, White and Blue Fruit Kabobs are adorable!

• You can even tuck some chunks of angel food cake onto your fruit tray (like in the photo above) or into your fruit kabob skewers. 

• In the fall, juicy apples are a great alternative to summer’s berries.

Snack Bites. Wait … what? Yes, Snack Bites. If you thought they couldn’t be any more awesome, you were wrong. For a nutrient-filled dessert, grab one of those little guys and give ‘im a swim in this Chocolate Dip. Takes Snack Bites straight from snack time to dessert indulgence. Honestly, that’s basically the idea behind our healthy Buckeye recipe. Try it!

• Graham crackers (go for reduced-fat if you can find them).

• Craving sweet and salty? Try Pretzels. Or Peanuts!

• Just a spoon! (Yes, it’s that good.)

3-Ingredient Chocolate Dip

Yield: About 1 1/4 cups
Prep Time: 5 minutes
Cook Time: 2 minutes
Total Time: 7 minutes

Just 3 simple ingredients! This decadent Chocolate Dip recipe is terrific served warm, as a fondue for parties or an indulgent dessert for romantic dinners. But it's also fantastic for dipping at room temperature, too — ideal for sharing at picnics and potlucks!

  Ready in 30 Minutes or Less    Make Ahead    Vegetarian    Gluten Free  

Ingredients

  • 1 1/4 cups semi-sweet chocolate chips, divided
  • 1/2 cup fat free evaporated milk
  • 1 teaspoon coconut oil

Instructions

  1. Place 1 cup chocolate chips, evaporated milk, and coconut oil in a medium-sized, microwave-safe bowl.
  2. Microwave on high for approximately 1 1/2 minutes (the exact timing can vary slightly depending on the power and wattage of your microwave).
  3. Stir until completely smooth and well-incorporated. (Do not microwave again. Just use the heat from the warmed chocolate mixture to continue melting the entire mixture.)
  4. Once the warmed chocolate mixture is smooth, stir in the remaining 1/4 cup chocolate chips and continue stirring until they're melted, and the dip is thickened and entirely smooth.
  5. Serve immediately as a fondue / warm molten lava dip, or allow to come to room temperature, and serve with fruit, graham crackers, or other dippers (see additional serving ideas in post above).

Notes

Make-ahead tips: This Chocolate Dip can easily be made a day or two ahead and stored, covered, in the refrigerator. If you'd like to serve it as a warm molten lava dip or fondue, gently rewarm it in the microwave until it's the desired consistency. Be sure to check it and stir it very frequently while rewarming, so it doesn't scorch during reheating. If you prefer to serve this dip at room temperature, take it out of the refrigerator a little before serving (since it's a bit too thick straight out of the fridge for easy dipping). It'll return to a perfect dipping consistency as it sits.

Wanna share a little bit of love with your kiddos at lunchtime, even when you can’t be right there with them?

Well … I guess you could be right there with them. You could go dashing through the school cafeteria to swoop in amongst all their chattering friends, and grab them up in a giant bear hug. You could. But maybe don’t. Just trust me on that one.

You also could write sweet notes to tuck in their lunch boxes, and draw little hearts on their napkins. Full disclosure? I still draw those hearts … and I truly want to believe that Amy and Ty still secretly like them. But now that they’re in high school, I’ve gotten the patient request to please confine my hearts to a realllllly teeny tiny place in the napkin’s corner where no one else will notice them. Ahem. Teenagers.

So, I’ve found a whole new way to share a little love.

Easy strawberry hearts really share the love with these sandwich skewers, but you can mix and match all sorts of different fruits, jellies, and nut butters (or nut-free butters)!

It’s easy, it’s nutritious, and it’s really yummy, too. Total lunchtime victory!

Why Your Kids (and You!) Will LOOOOVE These PB&J Pinwheels

These PB&J Kabobs have it all goin’ on.

  • PB&J! – At their very most basic, these are still just good old, tried-and-true, peanut butter and jelly sandwiches … but a whole lot cuter and more fun! (Because pinwheel recipes make any sandwich cuter and more fun!) No doubt about it, PB&J is simply a winner. You can change it up with nut-free butters, different jellies … so many options. But no matter its form or variety, PB&J has solid staying power, and a five-star rating from practically every kid, everywhere, ever. When you’re looking for lunchtime inspiration, it’s always a good place to start!

Pinwheel roll-up kebabs make school lunches fun!

  • Wow Factor! – But … no matter how much kids adore PB&J, it does tend to get a bit boring after awhile, doesn’t it? These kabobs take it from ho-hum to wow! Lucky for lunch boxes everywhere, here at THK, we have some solid experience with the PB&J wow factor. Hint … for more inspiration, peek at our Hungry Hippos Sandwiches or our Peanut Butter and Granola Crunch Wrap (which is quickly becoming one of the all-time most popular recipes we’ve ever posted) or our Peanut Butter Tortilla Sandwiches. No lunchtime is ho-hum with one of these around!
  • Healthy! – And you already know what I’m going to say next, right? These are also … wait for it … nutritious! Swap out your typical bread for a Flatout, and you’ve upped you nutrition game already. Loaded with fiber, whole grains and protein, Flatouts are an automatic health boost. Plus, these kabobs have pretty, healthy fruit threaded right on the skewers. And we always recommend 100% pure fruit jelly and natural peanut butters (read those labels, friends – it makes a difference)!
  • Easy! – These yummy kabobs are also simple to make. I promise!

The steps for making these PB&J Pinwheel Sandwich Kabobs are quick and easy – a perfect fast solution for school lunches! After spreading a thin layer of peanut butter and then jelly, you simply roll up the sandwich wrap, cut it into pinwheels, and then thread the sandwich pinwheels onto a skewer along with fruit! Simple but so adorable!

A thin slather of peanut butter (1), then jelly (2). Roll it all up (3), then cut little pinwheel circles and thread ’em on your skewers with some fruit (4). Done! (Oh – unless you still have to draw a heart on the napkin. Don’t forget that part!) See … so simple!

Just a few tips I’ve figured out, through all the times I’ve made these:

Tips for Perfect PB&J Sandwich Kabobs

1) Measuring – Our measurements for the peanut butter and jelly are just suggestions, and you honestly can probably get away without really measuring them precisely at all. But here’s the thing. You do want to be careful not to schmear on too much. That’ll lead to goopy pinwheels that are messy to roll, messy to cut. It doesn’t seem like much peanut butter or jelly, I know. But we’ve tested the amounts for both maximum flavor and maximum workability, and you’ll truly be happiest with just a thin layer of each.

2) Cutting – Use a very, very sharp knife (carefully!) for cutting these. You want to be sure you don’t mash the roll-ups as you cut them into pinwheels. If you don’t have a super-sharp knife, you could also try sawing gently back and forth with a serrated knife to give you a nice, clean cut without smooshing your pinwheels.

What’s not to love about this lunchbox idea? Pinwheels make sandwich wraps more bite-sized and fun … and threading those pinwheels onto skewers to make cute kabobs just takes the fun to the next level! Your kids will love these! And you’ll love that they’re quick and easy, and also really nutritious!

3) Skewering – Instead of jabbing your skewer right through, I find it works best (again … to avoid smooshing) if you gently rotate the skewer a bit as you ease each pinwheel onto it. For tiny kiddos, you can snap off the sharp, pointy ends of the skewers for safety after you’ve threaded everything onto each skewer.

4) Allergy-Friendly – Feel free to swap out different nut butters like almond butter or cashew butter to keep things interesting. Or, to make these sandwich kabobs more allergy-friendly for nut-free school lunchrooms, you can substitute a soy-based product like WowButter or a nut-free sun butter (made from sunflower seeds).

5) Mix and Match – As you can see in the photos, I sometimes like to match the jelly to the fruit I’m using. If I’ve got gorgeous strawberries, for example, I might use a strawberry jelly. But don’t feel like you have to be so matchy-matchy all the time. You don’t even have to use all one kind of fruit on each sandwich skewer – get creative!

So many options with these Sandwich Kabobs – choose whatever jelly and fruit your kids like best!

6) Choosing the Right Fruit – Grapes and all sorts of berries are a sure bet – whatever your kiddos like. I will say, though, that bananas aren’t my favorite here, unless you’re serving the pinwheels immediately, simply because skewered bananas will tend to be a bit mushy and brown if packed for several hours in a lunch box. In the dead of winter, when produce is sad and flavorless, you could even go for dried fruits like plump apricots, sweet-tart cherries, or luscious plums.

7) Making hearts – To truly share the love, it’s tough to beat adorable, heart-shaped fruit! Some strawberries and raspberries are naturally heart-shaped and darling.

Fresh fruit, like these gorgeous raspberries, is so terrific with these sandwich skewers, but you can also try using dried fruits like plump dried apricots, cherries and plum.

You can also easily cut strawberries into hearts as you core them. With a paring knife, carefully slope down off the shoulders of the berry on each side, as you cut down toward the middle, under the stem, to remove it. Instant heart!

  • 1 - 1 1/2 tablespoons 100% pure fruit jelly
  • fruit such as strawberries, blackberries, raspberries, blueberries, or grapes – rinsed and stemmed, if needed

Instructions

  1. Place a Flatout flatbread on your work surface and spread it very thinly with peanut butter, and then with jelly. (The exact amount of each that you use is up to you, but avoid spreading it too thickly, or the pinwheels will be difficult to roll, cut, and thread onto skewers.)
  2. Beginning at one short side, roll the flatbread up. (Don't roll too tightly, or you'll force most of the peanut butter and jelly toward the outer edges.)
  3. Using a very sharp or serrated knife, cut the roll-up into 7 (1-inch) pinwheels, being careful not to smash the roll-up as you cut. (If you prefer, you can roll the flatbread beginning at a long side, and then cut it into 10 (1-inch) pinwheels. These pinwheels will be a little smaller, which can be nice for tiny kiddos.)
  4. Thread pinwheels onto 2 wooden skewers, alternating the pinwheels with fruit. If you would like, for safety, you can snap the sharp skewer points off when you're done threading.
  5. Wrap in plastic and refrigerate until serving (or use lunch box ice packs to keep cool).

Notes

Nut butters and allergy-friendly options: You can change up these sandwich skewers by using different nut butters, such as almond butter or cashew butter. Or, for a more allergy-friendly option for nut-free lunchrooms, try WowButter (a soy-based, nut-free product), or a sun butter (made from sunflower seeds). 

Make-ahead tips: These are specifically designed to be made in the morning or the night before, then packed in a child's lunch. To keep them freshest, we recommend wrapping them closely in plastic wrap, so the flatbread stays soft and doesn't dry out.

More to Love (Warning: Adorable Hearts Ahead)

I think one of the things I miss most about elementary school is the fun holiday parties. (Oh … and also being line leader … I mean, the responsibility! The POWER!!!!!)

But … those parties! Halloween, when we all dressed up and paraded around in our cute little costumes while our parents snapped endless pictures. And Christmas, when we sang carols and ate candy canes (like … ummm … a LOT of candy canes, in my case … shhhhhh … don’t tell my mom 😉 ).

But I especially loved the Valentine’s Day parties.

I looooved making unique Valentines to give out. I was a little Cupid-Picasso, in my art-loving glory! (Melted crayons shaped like a heart, anyone? Because, you know, “You Color My World”?)

And, oh! The Valentine’s “mailboxes”!

One year, probably fourth- or fifth-grade, our class had a contest for the best-decorated Valentine box. Let’s just say the other kids never stood a chance. (Tee-hee … Cupid-Picasso strikes again!)

So you can imagine how sad I was when I got to middle school and discovered … no parties. And no one gives out Valentines anymore. I know, right? Little sixth-grade Amy was very disappointed.

It didn’t occur to me until now that I could still give out Valentines … just maybe not in the form of melted crayon hearts or sugary candies.

Nothing against little candy hearts … but wouldn’t healthy Valentines be even better, anyway????

And that’s exactly what these Double Chocolate Muffins are: my Valentines to you! Way tastier than crayons (not that I speak from experience on that) and soooooo good for you, too!

We’ve slashed the fat and filled them with fiber-rich whole grains. A heartfelt little Valentine’s Day treat that’s heart-smart too?!?! Um, yes!

But don’t be fooled into thinking these taste “cardboard healthy.” Oh, no. As the picky eater of the family, I do solemnly swear never to give you a recipe I wouldn’t eat myself!

These Double Chocolate Muffins are super rich and decadent, with a double-hit of chocolate from both cocoa powder and little chocolate chips. And those fresh strawberries! Little, burstingly juicy bits of sunshine!

And, hey … you can even have fun decorating these muffins, especially for your sweetie! See how we laid thick, heart-shaped pieces of fresh strawberry on top of some muffins before baking? (You may commence with the oooohing and aaaahing.)

Be sure to cut the slices nice and thick, and don’t push them down in. That way, your love will really shine through! <3 (Who thought to use that as a heart, anyway? Was someone doing their algebra homework and suddenly thought, “Oh, look at that! A heart!”???? Because I know love is one thing I’m definitely not thinking about while I’m doing my math homework.)

Trust me, these Valentines will love you right back. They’ll just keep on giving! In fact, when you’re waaaay overstocked on fresh summer strawberries that are about to go bad in your fridge, what will you make with them? These muffins, of course! Oh … and then you’ll definitely want to turn some of these muffins into Ice Cream Sandwiches, just like we did!

Healthy Double Chocolate Muffins with Fresh Strawberries

These Double Chocolate Muffins are loaded with rich chocolate flavor and juicy strawberries! So decadent, yet full of whole grains and so much lower in fat!

  Ready in 30 Minutes or Less    Make Ahead    Vegetarian  

Ingredients

  • 1 1/2 cups white whole wheat flour
  • 1 1/2 tablespoons cocoa powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 2/3 cup packed brown sugar
  • 1/3 cup nonfat milk
  • 1/3 cup 100% pure fruit seedless strawberry jelly
  • 1/4 cup unsweetened applesauce
  • 1 egg, lightly beaten
  • 1 1/2 teaspoons canola oil (see note)
  • 1 teaspoon vanilla
  • 1 cup stemmed and hulled, finely chopped fresh strawberries
  • 1/4 cup + 1 tablespoon mini chocolate chips, divided

Instructions

  1. Preheat oven to 400°F.
  2. Prepare muffin pans, lining with baking cups. (See note.)
  3. In a large bowl, combine flour, cocoa powder, baking powder, baking soda, cinnamon, and salt, whisking to thoroughly combine.
  4. In a medium bowl, combine brown sugar, milk, jelly, applesauce, egg, canola oil, and vanilla, mixing thoroughly.
  5. Make a well in the center of the dry ingredients and add the wet ingredients to the well. Stir batter just enough to combine, being careful not to over-mix.
  6. Add the strawberries and 1/4 cup mini chocolate chips, and stir again briefly, just to combine.
  7. Spoon batter into prepared muffin liners, filling each about 2/3 - 3/4 full. Do not over-fill. (See note.)
  8. Sprinkle the remaining mini chocolate chips evenly on top of the muffins.
  9. Bake for 14-19 minutes, just until a toothpick inserted in the center of the muffins comes out clean.
  10. Cool muffins in the pan for about 5 minutes or until the muffins are beginning to set and are cool enough to handle. Remove the muffins to wire racks to cool completely.

Notes

Canola oil: If you would like to eliminate the canola oil entirely, you definitely can. We tested this chocolate muffin recipe with no added oil at all, and felt that it was still very good. However, in our opinion, the very small amount of added oil here did slightly improve the texture of the muffins and is worth adding. Either way is delicious.

Yield, baking cup size and filling baking cups: There is actually a bit of variance in the size and shape of various baking cup liners, which is why we say that this recipe will yield between 12-16 muffins. We've tried a variety of liners, and, for the prettiest domed tops on these muffins, the most important thing is to avoid over-filling the muffin cups. Simply use an additional pan and make a few extra muffins, if needed.

For you long-time THK followers, you may remember back to our early days … and our end-of-the-school-year smoothie. It’s STILL a family fave at my house! It’s so cool and refreshing!

Really, what better way to celebrate the start of summer than with a yummy, icy smoothie? It’s the most perfect way to welcome home the kiddos and say, “You did a great job this year!! Can’t wait for our summer together!”

Several months ago, my littlest (who brainstormed our Pineapple Orange Creamsicle Smoothies, too!) was begging for a smoothie for breakfast. I had some fresh fruit on hand and just tossed it into the blender with some ice, honey, Greek yogurt and vanilla, and my Strawberry Banana Smoothie recipe was born. It was good. It was very, very good.

Is that really a thing? Too simple??

Classic Strawberry Banana Smoothie

Classic Strawberry Banana Smoothie

Yield: 3 1/2 cups
Prep Time: 5 minutes
Total Time: 5 minutes

This easy Strawberry Banana Smoothie recipe is cool and refreshing, with ingredients you probably already have on hand!

  Ready in 30 Minutes or Less    Vegetarian    Gluten Free  

Ingredients

  • 2 cups ice
  • 1 1/2 cups hulled, halved strawberries
  • 1 (5.3-ounce) container nonfat vanilla Greek yogurt
  • 1/2 very ripe banana (see note)
  • 2 tablespoons honey
  • 1 teaspoon vanilla

Instructions

  1. Put all ingredients into blender.
  2. Blend until smooth. All ingredients should be well incorporated.

Notes

Banana: A banana that has some green left or is still quite yellow won't work as well. Just like with banana bread, an over-ripe banana is the best choice to add the right sweetness for this smoothie. Another thought: frozen bananas also work great in this recipe! If you're like us, we always keep over-ripe bananas in the freezer, ready for recipes like this one. If using a frozen banana, your smoothie may be slightly thicker.

It’s a love fest! (We warned you!)

So just exactly why are you gonna love these so much? Hmmmmmm … did we mention three ingredients and maybe five minutes of prep? Oh yeah – that’s pretty darn lovable!

And you have just sooooo many options!

So, let’s get started …

For one thing, you’ve got chocolate options. You honestly don’t even have to use chocolate at all (and of course we tested that for you! 😀 ). But since Valentine’s Day and chocolate-covered strawberries go hand-in-hand, we highly recommend swirling in the chocolate, too!

Our testers preferred when the mini chips were even a little more “mini” – so we gave the chocolate chips a quick trip though our food chopper, as shown above. But you can certainly keep the mini chips whole, if you need to save a minute or two.

We definitely don’t recommend leaving out the jelly, though. While we’d really hoped that simply freezing Greek yogurt would be delicious enough to win raves from our tasting minions, that just didn’t happen. No one liked the yogurt-only version. At all. As in … they really didn’t even want to bother finishing their sample bites. Drat! The yogurt-only versions were healthy, sure. But another part of the THK requirement is that our recipes also have to be delicious!

Pure-fruit jelly was the answer. It perfectly amps up the strawberry flavor of these yogurt bites, so that our testers were literally chowing them one after another (uh-huh … loving them!!!). Gretchen’s kiddos actually argued over the last few yogurt bites! (Does yogurt love trump sisterly love????)

Luckily, it takes just moments to mix up the crazy-good Greek yogurt concoction, so it’s easy to stop sibling arguments by just whipping up another batch!

If you use flexible molds like we did in the photos above, after you spoon the yogurt into your molds, tap the molds gently on your counter so that the yogurt levels out across the top of each mold. In the photo on the right, you can see that, after we tapped the mold on the counter, the mixture leveled itself smoothly as compared to the photo on the left.

Now, before you pop these beauties into the freezer, you’ve got more options! (Here’s where it gets fun!)

Would you like to turn these yogurt bites into mini Greek yogurt popsicles? Our kids (and … ahem … our husbands, too) sure loved eating these as mini pops! And it’s simple! Before freezing, you just need to insert some sort of “popsicle stick.” You could, of course, use those little white candy sticks, or …

A super-festive way to customize these yogurt bites for different holidays (like we did here for Valentine’s Day) is to use pretty, colored paper straws. The straws make great popsicle sticks! For ours, we cut the paper straws in thirds, and they were just the right size. Really sharp scissors will get the job done, but if you find that your scissors are dull or smashing the straws, you can also use a sharp chef’s knife for nice, clean cuts, as shown in the photo above.

Don’t have any paper straws? No worries! You probably have some colorful toothpicks on hand! Choose colored toothpicks to coordinate with holidays or specific party themes. You can even tie pretty ribbon or food string into a sweet little bow on each toothpick, like we did for the photo above. It’s actually a lot easier than we’d imagined, especially if you tie the bow before you insert the toothpick into your yogurt popsicles for freezing.

One quick note about popsicle and candy molds, though. We definitely found that flexible silicone molds are the easiest to work with. The frozen yogurt bites just pop perfectly out of flexible molds – much better than they do out of hard plastic candy molds (although those can work, too, in a pinch).

But wait … don’t have a festive, holiday-shaped mold? No problem! Just make yogurt dots! Frozen Greek yogurt dots are a perfect summertime cool-off treat on a hot day! (Hint hint … bookmark this recipe to make later this summer …)

To make dots, just spread some parchment on a baking sheet and use a spoon to form little dollops, then freeze those to make dots. This can be so totally darling! Remember the Ghoulish Greek Yogurt Eyes we featured in our Spook-tacular Halloween Round-Up? Too stinkin’ cute … and so easy! Honestly, that’s kinda what got us thinking about frozen Greek yogurt bites in the first place!

So, really … chocolate or no chocolate, heart shapes or easy little dollops … there are just so many ways to enjoy this recipe! But we promise … these yogurt bites will be delicious no matter what options you choose.

3-Ingredient “Chocolate-Covered Strawberry” Frozen Greek Yogurt Bites

Yield: About 3/4 cup of yogurt mixture (enough for approx. 9-12)
Prep Time: 5 minutes
Total Time: 5 minutes

Perfect for snacks or healthy desserts, these easy Frozen Yogurt Bites can be made with or without molds. You'll love the chocolate-covered strawberry flavor!

  Ready in 30 Minutes or Less (Plus Freezing)    Freezable  •  Make Ahead    Vegetarian    Gluten Free  

Ingredients

  • 1/2 cup nonfat blended strawberry Greek yogurt (not fruit on the bottom yogurt)
  • 3 1/2 tablespoons 100% fruit seedless strawberry jelly
  • 4 teaspoons mini chocolate chips

Instructions

  1. In a medium bowl, combine yogurt and jelly.
  2. Chop chocolate chips and add them to the yogurt mixture, stirring thoroughly.
  3. Spoon mixture into molds, or dollop from a spoon onto a parchment-lined baking sheet. If using molds, tap gently on counter so the yogurt levels smoothly.
  4. Add "popsicle sticks" if desired (see note).
  5. Freeze until solid. Unmold or peel from parchment immediately after removing from freezer, while still thoroughly frozen.
  6. Serve immediately or return to freezer tightly wrapped or packaged in airtight containers.

Notes

"Popsicle sticks": As we mention in the text of this post, there are lots of fun options for sticks. We love using colorful paper straws, cut into thirds. For the size of our molds, colored toothpicks also work well. Be creative!

Molds: As mentioned in the post, we found that flexible molds work much better for this recipe than hard plastic candy molds. Have fun trying different sizes and shapes, based on the holiday or your party theme (or whatever mold shapes you just happen to have on hand). Also, don't forget that you don't even need a mold to make these. Simply follow our directions for spooning them onto a parchment-lined baking sheet to make quick and easy frozen yogurt dots!

Make ahead tips and storage: For longer storage, we recommend unmolding these yogurt bites (or peeling them off of the parchment if you aren't using molds), and storing them in an airtight container or freezer storage bag.

And every year Gretchen’s sweet friend, Steph, posts pics of her gorgeous, smiling kids at breakfast on the first day of school … always holding up a plate with a number-shaped pancake on it, showing what grade they’re starting! Seriously, is that not the most adorable idea??

So we got to thinking about an easy way to make shapes …

Shelley (who typically just drizzles her pancake shapes with a spoon … with limited success) did a major face-palm when Gretchen suggested this (much easier!!!) idea to her. We don’t want you to hurt yourself or anything, but you may need to do a face-palm, too. Sorry. But this totally rocks, and your kids are gonna think it’s seriously the most fun idea!

No more drizzling with a spoon (which tends to produce bloppy shapes) or trying to use snipped-corner plastic bags or Wilton decorating bags (messssss-y!).

We’re recycling today! An old (but cleaned out and washed!) ketchup bottle is the ideal solution!

Years ago, Gretchen saw an idea on Pinterest to make perfectly round pancakes using a ketchup bottle. Brilliant! Works like a charm.

But we don’t always want perfectly round pancakes. Sometimes (like for back-to-school or birthdays!) we want perfectly shaped!

Turns out that ’ol ketchup bottle trick is the secret to making pancake shapes, too! Simply pour the batter into the bottle, place the lid back on, and make some super-fun pancakes! 

Here’s what you need to know:

The easiest way to get the pancake batter into the squeeze bottle is to mix up your batter in a bowl that has a pouring spout. That handy spout makes the transfer process simple and practically mess-free. Just don’t pour too fast, or you’ll sort of loose that mess-free benefit!

These work great, too! These squeeze bottles are available at many craft and dollar stores. You may need to snip the tip slightly to allow the batter to flow through easily, as we did with the bottle on the right.

You don’t have to use a ketchup bottle specifically – try any similar “squeezy” bottles that have larger caps (for loading up the batter) but small squeezy openings (for making thin, neat lines of batter). If you happen to be a food photographer (ummmm … you should see our shelves full of props!) or a picnic caterer with random empty condiment bottles in your basement (like the ones pictured above), those work well, too. Just snip the tops a little, if needed, to enlarge the hole.

For bigger pancakes, it’s sometimes easier to use two spatulas to flip them, since the shapes tend to be a little delicate and floppy (and a giant pancake “3” on your third birthday just isn’t as cool if it’s broken apart into pieces!).

One other important tip … remember that some letters and numbers don’t look the same backwards and forwards. So, you’ll either need to serve the pancakes flipped onto the second side you cooked (the first side cooked is typically the “serving” side that faces up) … or use your very best spatial relations skills to squeeze the letters and numbers onto the griddle backwards (so they’re forwards once flipped and served).
